UMBRIA

Tradition is the basis of the cuisine of Umbria. The typical dishes of the Umbrian tradition are based on meat and products of the earth. It is a simple cuisine, with not too elaborate workings, which clearly enhance the flavors of the raw materials.
The roots of Umbrian cuisine lie in the civilization of the Umbrians and Romans with frequent use of legumes and cereals. Typical of the whole territory is the processing of pork and the production of cured meats.
A specialty of Umbrian gastronomy is the Torta al testo, which was born as an alternative to bread in the lunches of peasant families and owes its name to the cooking surface, called "testo", that is the brick tile on which, in ancient Rome, the focaccias were cooked.
